BlogLove... and Applesauce Muffins

Hello, dear friends in blogginess!
.....it has been a crazy week.....

between catching up on laundry... feeding the troops
(did you know that dinner has be served every freakin' day?!)...
daily opera rehearsals and just generally holding down the fort...
there hasn't been much time for oneshabbychick to come out... ;-}

But come out she must...
to say thank you so much to everyone
who's been reading, commenting, following and lovin' on this blog!!! Mwah!

She is also feeling the need to share another recipe...

and since the last one was a special, and rather involved one, for V. Day...
this one is easy-peasy-lemon-squeezey, baby.

The recipe came from my dear opera-singer buddy, Jane...
and since she passed it along to me about 1.5 weeks ago,
I have made it approximately 4.0 times.
And every one of those times, it has been a school morning...
and I have thrown it together in all of five minutes...
love.

This recipe is deceiving...
the ingredients seem way too simple to add up to something really good...
but the reason I have made them so many times is that they are
easy, healthful and scrumptious...
the monkeys devour them, and I have become a little addicted to them, too...

A winner and a keeper!

Therefore, I must share.......

I have tweaked the recipe a bit, to suit my tastes...
I added a little salt, and reduced the sugar by half,
and added a sprinkle of Turbinado sugar on top, for a delightful crunch.

So, without further ado....

Applesauce Muffins
Makes 12 muffins

1/2 cup oil
1/2 cup brown sugar, packed
1 cup applesauce
1  3/4 cup whole wheat flour
1 t. baking soda
1 t. cinnamon
1/4 t. salt
Turbinado sugar

Preheat oven to 375 degrees F.
Mix the oil, brown sugar, salt and soda together in a bowl.
Add the applesauce and mix well.
Stir in the flour and cinnamon.
Spoon the batter into oiled muffin cups or use paper liners.
Sprinkle each muffin top with a little Turbinado sugar.
Bake for 20 minutes, or until a toothpick inserted comes out clean.

Enjoy!......

And now for the thrifty-find fix... :-}

I am always on the lookout for shabby old urns on my treasure hunts...
but those babies are hard to find, and the best ones are really expensive...

so when I happened to come across this
lovely, crusty imitation of an old urn {real rust included}
on the clearance shelf when I popped into Pottery Barn this week...
for the magic price of $19.99
I was pretty tickled with myself.....

  1. I do love your urn, and apple sauce muffins of course. Did you know that I want your blog header in my living room? Definitely think we should introduce a dinner prep free day once a week - oh we already have that - takeout night.
Thanks for sharing the recipe, and that gorgeous urn.

    Cheers,

  8. Love your mantle design! And the recipe for the applesauce muffins is one I shall have to try. I put up several quarts of applesauce in the Fall and can use some of those in the recipe. I'll leave out the cinnamon since there's quite a bit in my applesauce. I enjoy visiting your blog :D

P.S. I didn't have turbinado sugar, but I do use only raw sugar, so this worked great.

  22. I was just about to make the muffins when I noticed that there are no eggs in the recipe. Is that correct? My other applesauce muffin recipe has an egg in it. Just checking.
    Cheers!
